Etto makes its pasta fresh twice a day. The team gets down to business first thing in the morning before replacing the spaghetti and rigatoni stock prior to the post-work and dinner rush, meaning its Italgi Traviatta pasta cooker gets quite the workout.

The majority of Etto’s trade caters to takeaways, young professionals and families after a quick, cheap bite to eat. You can and should call ahead to place your order. The affordable yet filling dishes are modular: pick your sauce (bolognese, carbonara and more), then choose one of six types of pasta. You'll be surprised by the difference fresh-made pasta makes.

Then there's pizzas, salads, sides, and the CBD store's Wagyu and parmesan sliders. If you're lucky you'll catch a doughnut for dessert. The most popular dish remains spaghetti bolognese, with the meatballs a close runner-up. Sometimes you just can’t go past the classics.
