Bistro Guillaume is located on the riverfront dining precinct in the Crown Entertainment Complex. Owner and chef Guillaume Brahimi first won acclaim with Sydney Opera House restaurant, Guillaume at Bennelong. It's since closed, moved to the Sydney CBD and adopted the more casual dining experience piloted here in Melbourne.
Despite setting up shop amongst some of the cities swankiest restaurants, Bistro Guillaume eschews the white linen service for naked tables and serve-yourself wine – no emergency crumb sweeping here. The focus is on having a comfortable, good-value, everyday feel and menu, along with a tight wine list that is comfortably split between French and Victorian labels.
Brahimi is regularly in the house, but the role of head chef is occupied by Brahimi veteran, Graeme McLaughlin (previously of Guillaume at Bennelong, Quay and Tetsuya’s). With interiors styled by Red Design, the space draws on the look and feel of France’s neighbourhood bistros, including classic timber panelling.
