Starting a restaurant is prohibitively expensive for most people. At Residence, inside the Potter Museum of Art, all one needs is a good idea.
Founders Nathen Doyle (who co-owns Sunhands) and Cameron Earl (front-of-house manager at Carlton Wine Room) wanted somewhere to foster new hospitality talent and concepts. Every 12 months, they flip the space and launch a new concept spearheaded by a hopeful chef or waiter, who wants a taste of being a restaurateur.
The debut resident is UK-born Robbie Noble (ex- Vue de Monde), who launched Cherrywood in June 2025.
The menu nods to his upbringing in northern England. A devilled egg, topped with smoked eel. Skirt steak with ox tongue folded into peppercorn sauce. Sardines are soused in mezcal and paired with cucumber. Rhubarb is poached and set with geranium oil, custard ice-cream and a brandy snap.
