On a recent trip to the Netherlands, Broadsheet had the pleasure of spending a day at the Ketel One distillery with Bob Nolet, the 11th generation master distiller who oversees the operation.

In the Nolet Distillery’s bar (housed at the top of a windmill, naturally), we were introduced to Nolet’s favourite vodka cocktail; the Tomatini.

Not a decades-old classic, but a drink created by UAE-based bartender Jimmy Barrat, the runner-up in 2012’s Diageo Reserve World Class bartending competition. Nolet first came across the drink at Zuma, the restaurant bar Barrat manages in Dubai.

Like an incredibly light, almost deconstructed Bloody Mary, this elegant cocktail will have spring coming early no matter how cold it is outside.

The Tomatini

Ingredients
50ml Ketel One vodka
15ml White balsamic vinegar
15ml fresh lemon juice
1 ripe tomato
Fresh-ground pepper

Method
Slice the tomato into segments and muddle in the base of a cocktail shaker. Add the rest of the ingredients. Shake with ice and double strain into a chilled coupe glass.
