Four Pillars Gin
At the Four Pillars Gin distillery, the four pillars of excellence are ingredients, stills, water and people.
Matt Jones, Stuart Gregor and Cameron Mackenzie founded the brand in 2013 to help people drink better, not more. They wanted to elevate the craft of distilling gin, and give it an Australian character free from kitsch.
At the distillery cellar door, you’ll learn how to taste gin properly. Take a sip, hold it on your tongue for 15 seconds, and breathe out. For the first few seconds you’ll feel that regular alcoholic burn, but then the flavours will appear.
At Four Pillars they’re distinctly Australian. Eucalyptus, lemon myrtle and Tasmanian bush peppercorn are just some ingredients you’ll be able to recognise in the four varieties of gin.
There’s a decent amount of indoor tables inside the warehouse dining space. You can look through glass windows at the three copper stills in the distillery itself. They’re named Wilmer, Jude and Eileen, after the owners’ mothers.
Taste a gin and tonic flight made with Four Pillars Rare Dry, Navy Strength, Cousin Vera and Spiced Negroni gin. If you’ve been at wineries all day, it’s a nice change.
