Peter Gunn: winner of the 2015 S. Pellegrino Young Chef of the Year Pacific semi-final; ex-Attica sous chef; and the man behind pop-up restaurant, IDES. Today, on Smith Street, he opens his first permanent restaurant.
It’s good news for those who have been trying in vain to book a table at one of his in-demand pop-up dinners. He’s been running them monthly at Persillade in East Melbourne since 2014 (in 2013 they were held at Tonic Bar in Kensington), while still working full-time at Attica.
Five months ago Gunn (whose resume also includes The Royal Mail and Ezard) left Attica to focus on turning IDES into a full-time restaurant. It opens today, on The Ides of March (technically a day late, but close enough), in the space recently vacated by Semi-Permanent.
It’s a set, six-course, no snacks situation, reasonably priced at $110. The menu will change depending on seasonality and availability, but expect punchy, technique-driven dishes such as pumpkin served with a rich chorizo and charred pumpkin reduction, topped with yoghurt and a “shitload of grated walnuts”. Dessert might be pineapples cooked in spiced maple syrup and served with crystallised ginger, lime zest, olive oil and a big scoop of ginger ice-cream.
