Gertrude Street’s favourite Mexican joint, Trippy Taco, is opening a second store in St Kilda in December.
Construction on the new shop began this week in the space that was Chinta Blues Malaysian restaurant on Acland Street, just next door to Lau’s Family Kitchen and around the corner from Prince of Wales Hotel.
While owner Simon Fischer’s previous builds were DIY, this time he’s working with builders and architects to create something, “More slick and designer, rather than something that looks like Homer Simpson built it.”
The menu will stay mostly true to the vegetarian Fitzroy original. Thanks to the extra space, Fischer is thinking of putting more emphasis on the bar and cocktails, as well as healthier options such as fresh juices, smoothies and salads.
The first Trippy Taco opened on Smith Street, Collingwood in 2006, before relocating to Gertrude Street, Fitzroy in 2011.
Trippy Taco St Kilda will open mid-December at 6 Acland Street, St Kilda.
