Matt Yazbek is bringing his award-winning Japanese restaurant, Toko, to Greville Street this week, looking to replicate its success in Sydney, where it has been driving the izakaya trend since 2007.

Melbourne's Toko will have an open kitchen, indoor and (cherry-blossom-adorned) outdoor dining areas, separate bars for whisky and cocktails and a sushi bar. It will also feature an extensive izakaya menu.

In its home town, Toko is famous for its cocktails. Toko Group sommelier Paul Birtwistle says the restaurant's show-stoppers are the Sashimitini, a martini made with gin, ginger liqueur and a piece of raw sashimi, and the Mars Mlatage Cosmo whiskey. It’s a blend of scotch malt and a newly distilled malt whisky from Japan’s Shinsu Mars distiller, which is located 800 metres above sea level and only brews whisky during the island’s harsh winters. “It’s probably the best whisky I’ve tried all year, and the best value – I bought a bottle for myself after the tasting,” Birtwistle says.

Toko opens to the public this Friday September 11.
