When they sold Coin Laundry 18 months ago, Steve Rowley, Matt Vero and Hugh Hindle were already sitting on the property that would become Tall Timber Eatery. They were just waiting for the right moment to launch.

A stint at Station Street Trading Co. bridged the gap, but now it’s time to unveil Tall Timber. And an impressive unveiling it is, with a large, white brick space in the front that leads back to an outside courtyard and side street seating away from the bustling Commercial Road.

The space recalls a rustic outpost, accentuated by the pots of herbs spilling out from the middle of communal tables. Rowley says that Tall Timber is “all about simple produce done well” with “a relaxing on-the-farm vibe”.

The coffee is from Niccolo and will soon be roasted onsite. “We really want to be in control of all of our coffee product,” explains Rowley. They’ll use the house blend for white coffees, while hosting a selection of beans from a rotating group of guest roasteries for black. “We’ve made quite a few friends in the coffee industry and it will be exciting to host different blends,” says Rowley. “We’re not looking to go into single-drip or cold press, so this at least will keep the baristas interested!”

The provisional menu has enough familiar characters to please those fond of Coin Laundry’s offerings, especially in terms of the generous portion sizes. “When you’re paying up to $20 for breakfast, the last thing you want is to go away hungry,” says Vero. “We’re really focused on providing value for money.” Expect quinoa porridge, brioche French toast and a few Mexican-inspired dishes. The chefs also have plans for a veggie big breakfast, which should make vegetarians with hearty appetites keen.

Tall Timber is a calm taste of homely hospitality, just a skip and a jump away from Chapel Street, minus the frazzle.
