Lit by the glow of fire dancers and marked by a glammed up queue spilling into Chapel Street, it was hard to miss the opening of Steer Bar & Grill on Wednesday night.

Located beneath South Yarra’s boutique Olsen hotel, Steer’s menu incorporates South American, European and Australian influences - but the key theme is certainly Brazilian.

The culinary team is headed up by New Zealand-born Executive Chef Stacy Thompson, with Raul Moreno Yague (ex Head Sommelier of Vue de Monde) as Wine Director.

“I want to take the finest and freshest Australian produce and combine them with my own experiences traveling and working in South America, to create the first refined dining menu in the Southern Hemisphere that infuses Australian and traditional Brazilian cooking styles,” says Thompson. So expect skewers of meat cooked churrasco style on a charcoal grill and a fiery focus, with a healthy kick of chili for good measure. But there’s plenty of seafood on offer too in the airy split level restaurant.

The real eye catcher though is the three and a half meter raging bull sculpture by artist Cezary Stulgis. Thank god for the high ceilings or you could feel a little trapped by his aggressive stance.
