Noma chef-patron Rene Redzepi will hold his international food symposium MAD at the Sydney Opera House this year. Speakers attending include Momofuku’s David Chang, Osteria Francescana’s Massimo Bottura, Billy Kwong’s Kylie Kwong and Redzepi himself.
Founded by Redzepi in 2011, MAD is a not-for-profit organisation that provides a forum where food-enthusiasts share ideas. For the past five years, MAD has been held in Copenhagen. However, following Noma Australia’s 10-week residency at Barangaroo, Redzepi has decided to hold the first Australian MAD.
This year’s conference is called MAD SYD: Tomorrow’s Meals, and will focus on the future of food, with a talk from Zimbabwean food activist Chido Govera and Australian social researcher, Rebecca Huntley.
MAD SYD’s speakers list is food royalty. David Chang has transformed how the world sees ramen with his Momofuku restaurants in New York, Toronto, Washington DC and Sydney. Italian chef Massimo Bottura is the author of four books and owns the three-Michelin Star restaurant Osteria Francescana in Modena, Italy. Kylie Kwong is the author, television presenter and chef behind Potts Point’s Billy Kwong.
MAD SYD will take place on April 3 at the Sydney Opera House. Tickets go on sale on February 22.
