A new 80-seat bistro is scheduled to open in Brunswick East in mid-March. Etta will be a modern-Australian, neighbourhood-style bistro with “a big accent on the seasons – lots of vegetables,” says co-owner Hannah Green.

The team behind Etta includes Green and chef Hayden McMillan (ex-Roving Marrow) together with his wife Dominique McMillan. Green and Dominique worked together at Rosetta.

“We’re conscious that where we’ve come from is pretty high-end,” Green says. “Ultimately we just want something that will suit the local landscape. If you want to come for just a glass of wine or a beer, you can do that. If you want to come and sit down and have a full meal you can do that too.”

The team has enlisted Iva Foschia from IF Architecture (she designed Marion is also overseeing the interior overhaul at Attica) to design the space. Think lots of Australian stone, banquettes in shades of burgundy and forest green, and wooden tables.

“We want the room to be beautiful but also approachable,” says Green. “We want that bistro hustle-and-bustle. No tablecloths.”
