Turns out, people like cheese north of the river, too. St Kilda fromagerie, Milk the Cow is expanding to a second venue in Carlton.

Work has already begun on a double-storey site on Lygon Street, just opposite the Cinema Nova, which will seat up to 80 people across both levels. There will also be a separate bar and cheese cabinet on each floor.

Despite the size of the new space, owner Daniel Verheyen is intent on bringing across the cosy, European feel of the Fitzroy Street original, as well as making sure the cheeses are displayed front and centre.

The Lygon Street location also has the added element of foot traffic from cinemagoers coming to and from the nearby Nova.

“From day one, we always knew that we were going north side,” Verheyen says. “There are cheese shops, but that licensed, late-night fromagerie doesn’t exist. Someone else was going to do it if we didn’t.”

With two stores, each stocking 150-or-so cheeses at a time, the amount of cheese coming through Milk the Cow is impressive.

“There are some dairy farms where we take the lot,” Verheyen says. “Everything that their goats produce for that whole batch of cheese, that all goes to us. No one else even sees it.”

The Carlton location will be another late-night venue with a 1am licence on Friday and Saturday nights, which means a midnight glass of whisky and a cheese board will be never out of the question on either side of the river.

Milk the Cow will open at 323 Lygon Street, Carlton in November this year.
