Jason M Jones is on a roll. As well as opening his new Hepburn Springs restaurant, Moor Please, just weeks ago, the cafe and restaurant operator is also behind Friends of Mine, Porgie & Mr Jones, The Stables of Como and Prix Fixe.
Having become a lover of all things French, and after a recent trip to Paris (where he admits making a beeline for popular steak and fries bistro L’Entrecote), Jones decided to look for a site in Melbourne where he could do a very similar concept.
It just so happened that friends of Jones’, Di and Peter Pausewang, who own the old Lynch’s site on Domain Road (also previously The Millswyn and Louie by Davis Yu), asked if he was interested in taking on the restaurant for a short-term lease. Jones decided it was the perfect spot for the Entrecôte concept.
With one vegetarian offering, Entrecôte will predominantly be a Parisian steakhouse that will serve one dish: steak frites. Adam North of Hopkins River Beef has been brought on as a partner to supply premium meat. The executive chef is Simon Moss, formerly a partner in the recently sold Sapore in St Kilda.
A refurbishment of the two-storey restaurant is being done by David Flack of Flack Studio, in what Jones says is, “A tongue-in-cheek play on the traditional French bistro.”
Jones says, “We have dragged bits and bobs back out of storage from the old Lynch’s including banquettes and the odd light or two which will be resurrected in the new design.”
A French-style breakfast will be served seven days in the bar and on the front (Domain Road side) patio from 7am until midday.
The dining room will open at noon, and as in Parisian cafes, service will continue through to midnight. The dining-room menu will sit at $39 per person and will include salad vinaigrette with walnuts on arrival, followed by entrecote (a premium cut of beef) and fries. Dessert or cheese to follow is optional.
The bar will offer a limited menu including oysters shucked to order, charcuterie and a cheeseburger.
Entrecôte will open in early December 2014.
