A few months back, the guys at Huxtable and Huxtaburger proved you don’t need to go over the top to create a simple summer epic. Turns out, the perfect lunch consists of a soft roll filled with sustainably fished lobster meat and a choice of three sauces: miso, wasabi and Sriracha-spiced mayonnaise or buttermilk ranch.

Late last year, chef Daniel Wilson and his team perfected their roll, called it Mr Claws and gave it a trial run at Taste of Melbourne last November, before opening a pop-up on Smith Street that ran until December 31. It was a success to say the least, and we were left wondering when we’d next encounter this sumptuous sandwich.

Turns out, we don’t have to wait too long. For the Broadsheet Summer Barbeque at the Royal Croquet Club, Mr Claws is back for two weeks.

“To me, an Aussie barbeque means lamb chops, sausages wrapped in bread with tomato sauce and prawns,” says Wilson. “But we’re doing something a little bit different for this one.”

“The Mr Claws offering is really about bringing a little of bit of luxury to a large audience. It’s not something that’s done here [in Australia] all that much.”

Or put another way: it’s the perfect dish to accompany a glass of Pimms and a spot of croquet.

The Broadsheet Summer Barbeque at the Royal Croquet Club will run from January 16 to February 1, 2015.
