George Calombaris’s Greek Hellenic Hotel will finally open in mid-June – two years behind schedule.
When it does, it will have Josh Pelham, ex-head chef at Northcote’s Estelle restaurant, at the helm.
“I’ve known Josh for 12 years now,” says Calombaris. “He worked for me at Fenix and at the Press Club. We’ve always stayed in touch. It was time [we worked together again].”
Hellenic Hotel will open in the old Hobson’s Bay Hotel in Williamstown.
Downstairs it will be a Greek-style “taverna”, and will serve “great Aussie pub food with a Hellenic touch”, Calombaris says.
Upstairs will be a public bar with sports screens and a big verandah.
