Fried chicken Sundays are now a thing. Starting this weekend, fried chicken and waffles will be on the menu at Belleville.
“We’re serving our 24-hour buttermilk-brined fried chicken with two different kinds of house-made waffles – a buckwheat, jack cheddar and bacon jam waffle, or jalapeno cornbread,” says executive chef Jarrod Moore.
For the extra hungry, a Southern Fried Spread is also available. That’s Southern fried chicken with waffles; ham hock collard greens; charred leek and potato salad; and chicken-fat garlic bread made with the juices from Belleville’s chicken rotisserie.
Fried Chicken Sundays started as an idea for the ultimate hangover brunch and further developed after Moore and his staff visited America.
“We took a trip through the South at the start of the year,” he says. “We got plenty of great recipes and Southern fried cooking tips from chatting to chefs like Martha Lou Gadsden from Martha Lou’s Kitchen in Charleston, and Duncan Aiken in Memphis, Tennessee. It was perfect to use their advice.”
Moore also has some tips of his own: “Get your hands in there. Fried chicken is messy hand food where there’s no cutlery needed,” he says. “When you smother that sucker in a sauce, it doesn’t get much better.”
The theme will continue on the drinks list, with Southern-style cocktails and Belleville's Pepperberry Bloody Mary.
Southern Fried Sundays launches on September 24, from 11.30am to 5.30pm, and will be held every Sunday onwards. Bookings can be made by contacting Belleville.
