While thousands of Melburnians peel themselves out of bed on Sunday morning in search of eggs and avocado, Simon Blacher craves pho.

“If you think about it, you get good carbs, good protein and it’s fresh,” Blacher says. It’s also what millions of Vietnamese wake up to every day – so why not do it here?

From 9am to midday on Sunday mornings, Hanoi Hannah is turning on its own version of Vietnamese breakfast. The pho breakfast bowls come with your choice of beef, chicken or mixed mushroom.

The chef has also warped the classic egg-and-bacon roll, presenting instead a grilled pork belly and egg banh mi.

As can be expected, you can also get a traditional ca phe da – a dark Vietnamese iced coffee with condensed milk and water. For a little extra spice you can opt for a Bloody Mary with a garnish of skewered mini spring rolls (to dip in).
