Super Taco, a colourful new Mexican food truck from the team that brought you Mr Burger, Fancy Hank’s and Welcome to Thornbury, is getting its first run tomorrow, launching at Fed Square with free tacos for all. Yes, free tacos. For all.

“We want to put the fun back into Mexican food, the way it should be,” says Maliek Edwards, the man behind the van.

There are three tacos on the menu, each with its own unconventional “super ingredient”: fried chicken and cactus, brisket and peanuts, and four-mushroom with Meredith goat's feta and pickled red onion.

“The cactus is our spin on fried chicken with pickles. It’s slightly sweeter than your average gherkin, it’s a little more like a cornichon. It’s delicious,” says Edwards. “The four-mushroom taco is probably the best. We wanted to make the best possible taco, and offer it to vegetarians. I’m a meat-guy, and even I say it’s good”.

The truck also offers a variety of fresh sides, all made by hand with herbs and spices prepared from scratch. There’s charred corn rolled in manchego cheese (drizzled with chipotle mayo), hand-fried corn chips (“we literally fry each corn chip by hand,” Edwards says), and “the best damn vegetarian braised chipotle beans.”

And did we mention that for a short time tomorrow, these tacos are free? The brightly painted truck will be at Federation Square on Friday the 25th of September - giving away free tacos from 12-2pm.
