You never know what’s going to be in the cabinet, but there are two constants. One: the dough is always perfect, whether it’s the yeasted American style, French choux cruller or old-fashioned buttermilk. Two: everything has been made from scratch. If your doughnut has a brownie crumbled over it, the brownie has been mixed and baked right there in the busy open kitchen. If there are nuts on it, they were roasted in-house.
