Seeing Mamasita empty is a privilege not extended to many. From the moment the doors open at noon, a steady stream of patrons make the trip up the golden staircase and by 12.30pm the restaurant is full.
In full flight, this taqueria is a sight to be seen – everywhere you look there are people, tacos and margaritas. The atmosphere is electric.
But during the day, before the crowds descend, the restaurant is peaceful. The mood is relaxed but professional and it’s this professionalism that keeps the restaurant running smoothly during the rush period.
In the kitchen, the chefs are shucking corn, mixing spices and checking their supplies. The head bartender briefs the staff on the bar’s latest cocktails, tables are set, sections are assigned and this well-oiled machine gets ready for another busy night.
