On Monday, it was announced that two of the restaurant’s key players have left the business.
Two of the restaurant’s co-owners and founders, chef John-Paul Fiechtner and sommelier Sally Humble, announced their departure from the ambitious South Melbourne restaurant.
In a statement, the pair says, “We are saying goodbye to Lûmé, and hello to Singapore. Yes, we are currently working on an exciting new project.”
Co-owner and head chef Shaun Quade remains at the restaurant.
When Lûmé opened in July 2015, a collective of co-owners and staff displayed matching tattoos for the occasion – permanent ink of the restaurant’s logo to show their dedication to the team and the cause.
The restaurant offers a 15-course degustation for $140. Diners are presented with the menu only once the meal is finished. The front bar is more casual, offering an a-la-carte menu with wines by the glass.
