Two years later the brothers behind Billy Van Creamy gelato have opened another summer pop-up, this time on Gertrude Street.
“We couldn’t say no to a space on Gertrude Street,” says Mitch, who designed the space with his brother.
“We’re hoping to try a few different things,” Alex says.
One is a collaboration with Butterbing Cookies for BVC’s take on cookies and cream – ice-cream sandwiches.
It is serving new, seasonal sorbet flavours such as plum, peach and lemon, as well as Billy Van Creamy classics such as vanilla bean, chocolate, salted caramel and the in-house favourite, choc mint.
The pop-up store has eight flavours on offer each day, which rotate between the 12 on offer at the Fitzroy North base. It is also doing affogatos, iced coffees and iced chocolates.
“We use biodynamic milk and raw organic sugar in our gelato, and seasonal fruits in our sorbet, which we make ourselves in our Fitzroy store,” says Mitch.
Melbourne artist Esther Olsson has painted a giant ice-cream cone on the front window, and her mural inside the store is a shower of pink and blue ice-creams.
“Esther has a cool street vibe,” Alex says, “which is where our roots lie with our ice-cream food truck.”
The pop-up is open until May.
