Casey Wall from Rockwell and Sons has joined with 2015 Sommelier of the Year, Banjo Harris Plane, and ex-Attica manager, Michael Bascetta, to open a wine bar on Johnston Street.

Bar Liberty, named after a line from Star Wars III: The Revenge of the Sith ("So this is how liberty dies ... with thunderous applause"), will open on the former La Condesa site on Thursday.

The focus will be on drinks, with an extensive wine list and a solid selection of beers, liqueurs and sake. Pre-bottled (but house-made) cocktails, such as the Briny Bay with vodka, olive brine, salt and bay oil, will also be available.

The food menu will be quite refined – Wall cooked at Cutler & Co. before he opened Rockwell. Expect snacks ranging from olives or oysters, to a plate of gabagool (a type of salami) or fried potato with fermented chilli. Bigger shared plates might be cured scallops with fermented buttermilk and cavolo nero, or hanger steak with onions, mustard and anchovy.

Bar Liberty will open on Thursday February 18 at 5pm.
