Shane Delia is bringing his finessed Middle Eastern fare – and generous hospitality – to the north, after opening a south-side spin-off his CBD dining institution Maha in June last year.

The chef and TV personality will open Maha Bar on Smith Street, Collingwood on February 24. And he’s offered to cook a free meal, worth around $1000, for eight people to celebrate.

If Delia’s Maha East in Windsor is the relaxed, suburban sibling to his worldly, big-city firstborn, then the latest addition is the next-gen youngster who knows their way round a bar.

The meal will draw from Maha Bar’s shared soufra menu, which features small and large plates (known as meze).

Expect dishes such as spiced beef buns with coconut-harissa curry; semolina crumpets with saffron eggs, pickled onions and salmon roe; Macedon Ranges duck breast with muhammara (hot pepper dip); slow-roasted lamb shoulder with smoked eggplant and lamb-fat jus; fish with capers, green olives and burnt butter; and macaroon bil toum – vegan chickpea and garlic dumplings.

There’ll also be plenty of plant-based options, and desserts such as Turkish delight doughnuts with walnut ice-cream and rosemary honey.

To drink, expect house-infused araks and rakis (anise-based spirits) served on ice; inventive Middle Eastern-inspired cocktails (there’s an arak-based caramelised pineapple and saffron granita sprayed with raki and coconut rum); classic cocktails (including four types of Negroni); wine; and beer.
