Right now, Broadsheet's first ever forecast for the next year in Australia's food culture is in print.

The Next Guide is a partnership between Broadsheet and BMW. Available for free in all BMW dealerships, it's a collaboration that explores the trends that will shape the coming year.

The theme of spontaneity drove the inaugural guide, it was a catalyst to broaden our focus from Melbourne and Sydney.

We spoke with the innovators from across Australia – chefs, entrepreneurs and restauranteurs willing to go on the record and stake their claim for what the future will hold.

These are the people setting the standard for what you'll be eating, drinking and doing in the next 12 months.

From Brisbane, where chef Ryan Squires of Esquire and Esq. has moved beyond the menu, to Perth's Varnish on King, taking 'house-made' to the next level by making its own wine.

In Victoria, we went on a day trip with Kettle Black head chef and keen surfer Jesse McTavish to the picturesque Mornington Peninsula. There are just a few printed guides left, so pick one up and learn how McTavish forages for sea urchins, prickly pears and many other ingredients that end up on your plate at his restaurant.

All across the country, venues are challenging expectations. Some use social media in new and unexpected ways, while others eschew publicity entirely and open in secret.
