Barbados-born chef Paul Carmichael’s international cooking career has seen him work in some of the world’s most awarded kitchens. His journey has led him to Sydney’s Momofuku Seiobo, where as executive chef he draws on his heritage to create some of the city’s most authentic Caribbean-inspired cuisine.

For just two nights this month Carmichael will take over the kitchen of Shane Delia’s Maha and run a bespoke menu as part of Maha’s Unrestricted dinner series using the best local produce and talent to recreate his award-winning food.
