A Moment For: Ca Com and Tom Sarafian’s Banh Mi Shawarma

Before he opened Hot Listed Zareh, chef Tom Sarafian was known for pop-ups, where he’d often serve some of the best shawarma in Melbourne. Over in Richmond, Anchovy’s Thi Le and Jia-Yen Lee consistently make exceptional banh mi at their fire-powered shop Ca Com. To celebrate five years of Ca Com’s permanent Bridge Road digs, this Sunday June 28 Sarafian and Le are collaborating on a banh mi shawarma, available for one day only.
In place of the typical baguette, the banh mi filling comes wrapped in saj, a Lebanese flatbread served at Zareh. Inside is lamb shoulder marinated in fish sauce and Vietnamese spices, spit-roasted over charcoal, then thinly sliced and finished over the fire. Complete the wrap with Sarafian’s toum and Ca Com’s classic fixings: chilli oil, pickles, fresh herbs, spring onion oil, fried shallots and cashews.
