When Broadsheet speaks to Andreas Papadakis of Hot-Listed Tipo 00 , the chef says he’s feeling nervous. Fair enough, given Conferre Group – the restaurant outfit he runs with Luke Skidmore and Alberto Fava, which is behind some of Melbourne’s best Italian spots (Tipo 00, Osteria Illara , Grana and Figlia ) – is about to launch its first non-Italian venue.

Harriot will be a “Melbourne restaurant with a European French vibe,” Papadakis says. It’s expected to open in June at 555 Collins Street , across the street from Il Mercato Centrale and a 15-minute walk from Tipo 00 and Osteria Illaria.

Chef James Kelly (whose résumé includes Hot-Listed Embla , Michelin-starred London restaurant Lyle’s and, in Papadakis’s words, “a couple of occasional rockstar shifts” in Conferre Group kitchens) will be the restaurant’s head chef. Papadakis says he’ll be involved with Harriot himself, while letting Kelly put his own spin on it.

The menu will be built around the kitchen’s Brick Chef -built woodfired oven. Papadakis says there’ll be a focus on local produce, line-caught fish and game birds such as quail and duck, as well as woodfired sourdough bread. Desserts will be “classic” and wines will come from “all over the world”, with the team pulling from the group’s decade-old cellar. The vibe will be “more refined” than the Conferre Group’s other venues, “but still pretty relaxed”.

Papadakis says the group never planned for its next venue to be Italian. “It’s really exciting to do something a little bit different,” he adds.

Harriot is expected to open at 555 Collins Street, Melbourne , this June.
