With restaurant menus leaning heavily into retro dishes, it doesn’t get more classic than this. Originating in the French town of Pithiviers, and first baked in the 17th century, this is elevated (not so humble) pie. A round, beautifully pleated top sits like a fancy cap above the filling – mushroom, cheese, meat or even sweet almond – with a layer of pastry beneath, forming a crisp base.
