Chefs pride themselves on seasonality, but the team from Three Blue Ducks in Sydney's Bronte live by it. They’re switching surfboards for snowboards to run “a little cafe in the mountains” this winter. As Victoria’s snow season officially opened last weekend, so did The Gully Bar & Restaurant by Three Blue Ducks in Falls Creek.

From Bronte to the mountains, the Three Blue Ducks philosophy remains the same: honest, innovative and local. Produce from Mount Beauty to Kiera Valley is delivered to the base of the mountain and a skimobile is used for the final leg. The bar is stocked with local beers from Sweetwater Brewery in Tawonga, Bright Brewery in Bright and Bridge Road Brewers in Beechworth. Coffee is the exception to the rule – beans are from Sydney’s Single Origin Roasters (a crowd favourite in Bronte).

The Gully is an all-day affair, open for breakfast, lunch and dinner. With a handful of Tetsuya's-trained chefs in the mix, it marks a significant shift in mountain dining. Start the day with black rice, quinoa and sago porridge with yoghurt, roasted almonds and passionfruit. After a few hours on the slopes, refuel with an American-style burger with house-made buns and tomato sauce. Or perhaps braised lamb shanks with zucchini, mint and pea salad.

After a day on the slopes, The Gully’s hearty, rustic fare sounds like music to our ears. All we need now is some snow!
