Lyndon Kubis (Toorak Cellars, Milton Wine Shop) together with Renton Carlyle and Mark Hopkinson (both owners of Milton Wine Shop and Romulus & Remus), will open a wine bar on Commercial Road in Prahran; two doors up from Tall Timber.
It might seem like a brave move for the men, who have so far stuck to quieter, less-competitive neighbourhoods. But although there are already a number of places to get a drink in Prahran, Kubis promises there is nothing like this.
“The idea is that it’s a place where you can go and hang out and have a drink and not think about it, but if you do want to nerd-out on some serious wines, this will be your place,” says Kubis.
There will be about 20 by-the-glass options and, like their other bars, a huge range of bottles (400-plus) will be available to either take away or drink in for a corkage fee of $15.
“The list will focus on minimal intervention wines, those made by young guns and old masters alike, and any producers considered avant-garde, with everything coming back firstly to deliciousness, and secondly to integrity of place,” says Kubis.
There will also be a selection of pre-mixed barrel-aged cocktails, such as Negronis and Manhattans. Food will be the usual cheese, charcuterie, terrine situation, but the boys have plans to revamp the pizzeria next door so they can serve wood-fired pizzas.
