A tart is a tart, right? Not when chef Bernard Chu gets involved. Visitors to Chu and partner Yen Yee’s South Yarra patisserie, LuxBite, would have already experienced the sweet magic that is its macarons (we’re talking mandarin Jaffa; green tea pistachio; and peanut butter and jelly) and cakes (including the Lolly Bag Cake with Jaffa, red skin, musk and banana).

Not satisfied with dominating Toorak Road’s sweets market, in early November Chu and Yee will bring their winning combination of classic French technique and quirky Asian influence to T by LuxBite in a new CBD development, The Archway. Poised to bring some of the culinary good stuff to the Spencer Street end of Flinders Lane, The Archway already houses Altius Coffee Brewers and 5 & Dime Bagels.

Chu says T by LuxBite is an entirely different concept to the South Yarra store.

“We didn’t just want to copy and paste South Yarra into the CBD. So there will be no coffee, no tea, no brunch,” he says.

What they will have, though, is tarts, 10 kinds everyday. Think flavours such as calamansi-lime curd with jackfruit and chilli salt, topped with meringue and kaffir lime sherbet.

The small space demands a take-away only situation, so you might have to learn to eat your tart on the run.
