It’s a sign of the times in Melbourne that The Aylesbury is closing its doors and revamping itself as Bomba – a vibrant, relaxed Spanish eatery.

Opening in September 2011, with husband-and-wife team Jesse and Vanessa Gerner at the helm, The Aylesbury championed a ‘top-to-tail’ fine dining experience that has since been overshadowed by a desire – from diners and the owners alike – for a casual yet high-quality eating experience.

“It’s kind of the Chin Chin effect,” says Jesse. “People want to have fun, sit in a really cool space and still have really good-quality food without all the rigmarole that goes with fine dining.”

With a vivacious style at heart (and a name that translates to ‘bomb’), Bomba is set to become a cheeky little sibling to the Gerners’ other eatery, Añada. “Bomba is a bit cheaper…it’s my version of a fun, pared back workers’ bar with punchy Spanish goodness,” explains Jesse.

Fresh from a jaunt in Spain, Añada’s current head chef Andrew Fisk will join Gerner in the kitchen. The pair will craft a menu of simple, well-executed and affordable Spanish food with a selection of small tapas, bigger share plates and dishes from the charcoal grill.

A thoughtfully curated mix of artesian Spanish wines will accompany the menu, along with an impressive array of cocktails, sherry and vermouth.

Utilising a Lonsdale Street location that is close to city arts venues, both the rooftop and dining area will work as complimentary yet distinct spaces for punters to enjoy.

The Gerners are even planning a laneway hole-in-wall to serve churros and bite-sized snacks to passersby. The last service day for the Aylesbury will be August 24, with a revamped Bomba opening its doors mid to late September.
