Soft-serve ice cream makes a triumphant return via the capable hands of Pierre Roelofs.

The dessert chef, known for his high-end sweet-degustation evenings, most recently at Cafe Rosamond and Fancy Nance, has announced a specialty dessert shop in Melbourne’s CBD. Until then, he’s teasing us with a soft-serve pop-up outside North Carlton’s Green Park Dining.

Roelofs explains, “The idea is to take away the image of soft-serve that we had growing up as kids – the cheap and cheerful Mr Whippy.” Keeping it simple, Roelofs’ soft-serve will contain classic, high-grade ingredients: cream, vanilla, sugar and skimmed-milk powder.

“The machine used to make soft-serve is actually really technical,” Roelofs says. “But if you put good things into it, good things will come out.”

The concept is straightforward. Simple vanilla soft serve can be covered in one of three toppings.

The Milli Vanilli is vanilla meringue, jellies and pound cake. The Puffed Daddy layers date balls, dulce de leche, puffed millet and puffed golden syrup corn. The third option is the Strawberry Cheesecake, which will garnish the soft serve with a baked cheesecake puree, fresh strawberry slices and a cheesecake base, rolled out into thin wafers.

Pierre’s is a collaboration with Jesse Gerner (Añada, Green Park, Bomba Tapas Bar and Rooftop).

The permanent CBD venture to come will explore wider dessert territory than the North Carlton pop-up. It will offer a range of soft-serve flavours, homemade sodas, milkshakes and takeaway desserts. It’ll also showcase a secret product, which Roelofs claims is something entirely new to Melbourne and the world.

Pierre’s pops up outside Green Park every Saturday and Sunday from January 9, between 12pm–6pm (or until sold out).
