It took Sonam Sherpa one week to put together his new cafe. There’s not much to it. White walls. One bench. Fern.
When Fitzroy pop-up cafe Place Holder closed in February, after a year of trading, co-owner Sherpa wanted to continue the steadfast format: takeaway coffee done well. There’s also pressed juices by new health-food wholesaler, Matchless Goods, and a small selection of Jo Barrett cakes and Loafer pastries.
Coffee is Candyman blend by Small Batch, and is run through a white La Marzocco Linear machine.
It’s a solid little local, and Sherpa’s the kind of guy to remember your name and coffee orders by heart. There aren’t too many distractions.
