The latest addition to Shannon Bennett’s fleet of eateries is set to open in the city this Tuesday.
The menu is tight, comprising salads, sandwiches and pastries from Vue Group chefs. There’ll be coffee by Five Senses, and bulletproof coffee emulsified with butter or coconut oil.
If you forget your keepcup, Barista lends out reusable cups. Failing that, its single-use cups are completely compostable.
The focus on sustainability extends beyond cups, with coffee grinds being reused as fertiliser at the historical Burnham Beeches estate in the Dandenongs, and recycled timber from Bar 20 – which in a week will be 400-capacity live-music venue Geddes Lane – used for Barista’s build.
Barista by Vue will open Tuesday October 9 at 430 Little Collins Street, Melbourne, with $1 coffee all day for those who BYO cup.
