Coming Soon: The Next Hector’s Deli Will Take Over a Heritage-Listed CBD Space

Hector’s Deli, the Dua Lipa-approved Melbourne sandwich shop, opened its first CBD location in October last year. Around that time, co-founders Dom Wilton and Vanessa Bossio were also starting to hatch a plan for its second CBD spot.
A new Hector’s Deli, the brand’s sixth location, will open at the heritage-listed former Le Shoppe space beside Chancery Lane at 430 Little Collins Street, Normanby Chambers on Saturday November 29. Expect the Hector’s Deli standards, including tuna melts and salad sandwiches, as well as bakery items like doughnuts, scrolls and croissants.
Wilton says there may also be Friday hot roll specials, something the team has started offering at Hector’s Bakery in Richmond. “It’s a hot beef and gravy on our house baked hoagie, but this will rotate over the year and give our team a chance to experiment,” he says.
Like all other Hector’s Deli shops, the focus is on takeaway (though there’ll be room for about 15 people to sit and eat). The team has worked with Adelaide-based architecture firm Studio Gram (Ponyfish Island, Arkhe in South Australia) to make the European-inspired deli fit-out feel “chic, pared back, timeless”. Wilton says there’ll be “Warm, glowy lights, timber so specific that the grain reads in a particular way, leather banquettes to suit the feel of the legal precinct and an ordering point that feels like an altar fit for sandwich worship.”
The New Hector’s Deli is expected to open on Saturday November 29.
