There’s a definite theme running around Melbourne dinning of late, and it’s got a distinctly Scandinavian feel to it. Let’s blame it on a fascination with San Pellegrino’s world no.1 restaurant Noma and its Danish chef Rene Redzepi.

Whatever the reason, the Nordic flavour is on the menu again with restaurateur Davis Yu’s hotly anticipated The Millswyn in South Yarra slated to open its doors to the public on November 8.

Formerly Lynch’s, the site has undergone a name change (reflecting its location) and an overhaul by Melbourne design studio, Hecker Guthrie (Sensory Lab, St. Ali, Outpost). But just to keep it fresh here’s the twist- the food is French Brasserie, in a Nordic inspired setting.

In keeping with another Melbourne trend that we’ve seem emerging, the aspiration here is for simple and unfussy food of the highest quality. And considering British chef Nathan Johnson radically jumped the Gordon Ramsay ship at Maze Grill to take up the reigns, we’re looking forward to seeing what’s on offer.

Just across the road from the leafy Royal Botanic Gardens, detailed research went into creating the right European feel interior (Yu looked for inspiration from Copenhagen to Chicago)- watch out for plaited mops, white tiled walls and Italian porcelain lights.

“I wanted the design of The Millswyn to be understated yet sophisticated, detailed yet simple,” says Yu. “The interior needed to convey the sleek, minimalist lines of Stockholm and at the same time deliver a functional aesthetic.”
