Any American knows a sandwich is best with crisps and a pickle. So does Adrian Van Lieshout, the ex-manager of St Edmonds, who has just opened the shutters of his tiny cafe near Elsternwick Station.

Taking up residence in what was previously a three-seat barbershop, Milky Joes puts a US spin on the contemporary Melbourne cafe, serving up classics like avocado fetta mash alongside ‘pork-slaw’ rolls.

Van Lieshout and business partner Dorian Padgham use Allpress coffee and Jonesy’s milk to satisfy the bleary-eyed train travellers. But they are weekend people too, dishing up all-day breakfast and ‘The Tradies’ Beast’ – a white French roll with house-cured Berkshire bacon, a fried egg, a hash brown, tomato onion jam, iceberg lettuce and homemade HP sauce (they claim it’s “bad ass”).

Having opened last week, Van Lieshout is still putting the final touches on his baby, which is really just one outdoor table, a little bar and a busy kitchen. “I had heaps of fun this weekend driving around to op-shops collecting things,” he says.

In the meantime, the boys are busy preparing Joe for his evening debut, where beers, 802g beef burgers and pie floaters (a homemade chunky pie in gravy) are on the menu. Watch this space.
