Do you froth for fromage? If you said Gru-yeah to that then this is big news. Cheesemonger Anthony Femia is swapping his cheese cart at the Prahran Market for a brand new store, also at the market.

The 50-person venue will be licensed, so you can pick from a range of local and international varietals. And there will be a walk-in cheese-maturation room containing imported cheeses and exclusive cheese releases from Victorian micro-fromageries.

Femia’s signature cheese-cart specials, such as the American-style grilled-cheese toasties, will make the move to the new store to be part of an extended menu. A weekly bruschetta will use fresh produce from neighbouring Prahran Market vendors, and there’ll be a Cubano sandwich with roast pork shoulder from Gary’s Quality Meats. There’s also going to be fondue. It’s safe to say it’s going to be an all round gooey time.

The space has been designed by Arteveneta to reflect the cheesemaking process. Touches like raw textures, brass, steel, marble and wood will feature throughout.

Maker & Monger will open at Shop 98, Prahran Market on Friday June 21.
