Smoke, spices and meat. These are the key ingredients to Texan barbecue and Red River BBQ is giving Melbourne a taste. Anyone who visits the southern state and samples the magic that happens when meat is cooked for more than 12 hours over hot coals finds that mouthwatering memory hard to forget.
Now, y’all can try it because Pat Lillicrap and Nick Keeling, formerly of catering business Smokestack Lightning BBQ, have rebranded as Red River BBQ, but they continue specialise in meat cooked Texas style: low and slow.
The boys are collaborating with Burger Mary and St Ali to bring three nights of barbecue to the masses. The first dinner sold out in a day, so the team added two more dates – this Thursday March 29 and Thursday April 19. Attendance is limited and tickets must be bought in advance, so get in quick.
To get your juices flowing, the three-course meal includes deep-fried pickle chips and bacon-wrapped, cheese-stuffed jalepenos, a selection of BBQ meats, traditional sides like mac ‘n’ cheese. To finish it off there’s Burger Mary’s peach cobbler for dessert. There’s also a Texan-themed drinks package with the had to find ‘Texan Ranger’ smoked porter beer, homemade Micheladas and Sweet Tea Vodka.
You Don’t Mess With Texas dinner is at St Ali Thursday March 29 and Thursday April 19. Tickets are $77 per person and $30 for the drinks package. Tickets are available through Burger Mary.
