You may know John Vernou “Black Jack” Bouvier as the father of Jackie Kennedy Onassis. But even before America’s former First Lady was born, old Black Jack had earned himself a reputation.

“He was a famous socialite, gambler, boozer and womaniser. He may have died of liver cancer, but he loved to party and he was always impeccably dressed,” says Adrian Richardson, chef and owner at La Luna Bistro, of the inspiration for his latest venture.

Richardson, along with La Luna’s restaurant manager Lynda Horton, and sommelier Jackson Watson (previously of Harry & Frankie, Vue de Monde, Taxi Dining Room), is opening a new venue, Bouvier, early next year. The name is a jaunty hat tip to retro Americana, but the bar promises to bring its own flair to Brunswick.

It will be split over two levels inside a former dressmaker’s. Downstairs will operate as a bar, offering a small, smart and affordable selection of wines, a range of classic American cocktails and bar snacks.

“We’re going to stick with the meat theme. We want to install a rail behind the bar so we can hang our house-made smallgoods from it,” says Richardson.

Upstairs is large enough to seat 110, and, at least initially, will be reserved for functions.

“It’ll be a sharper, slicker, smaller version of what we’ve got here at La Luna. We’ll start off and grow from there,” says Richardson.

Bouvier will open at 159 Lygon Street, Brunswick East, in early 2016.
