You’ve just been given a free pass to avoid sweating it out over a mixing bowl this summer. Macaron master – and head chef of LuxBite in South Yarra – Bernard Chu has collaborated with Piccolina Gelateria boss Sandra Fotti to create two new gelato cakes. The cakes mix Chu’s fine pastry techniques and Fotti’s handmade gelato.

First up is the Snowball. The cake starts with a layered coconut, roasted almond and condensed-milk semifreddo centre. On top of that comes self-saucing almond praline, salted puffed rice crunch and coconut gelato. To finish off the mad snow globe is a silver-leaf-covered, exploding chocolate bon bon.

Because everyone loves a classic, Chu and Fotti have also put their spin on the Tiramisu. The Tira-Miss-You is a chocolate chip and coffee gelato bonanza that also features Italian mascarpone, zabaglione gelato and Kahlua-soaked savoiardi sponge. It’s then encased in milk chocolate and dusted in cocoa powder.

Australian summers are hot enough without turning an oven on to bake a cake, leave it switched to zero and pick up one of these chilly bad boys instead.

Both cakes are available now at Piccolina Collingwood, Hawthorn and St Kilda. Cakes start from $85 and serve 16 people.
