They have already made a name for serving up the flavours of New Orleans to the streets of Melbourne, and now the team behind travelling food truck Gumbo Kitchen are getting set to celebrate Fat Tuesday next Tuesday (February 21) in classic New Orleans style.

The English translation of Mardi Gras, Fat Tuesday is the annual culmination of New Orleans’ carnival season.

Gumbo Kitchen will set up shop at the north gate of the Melbourne General Cemetery in Princes Hill, doling out their fried shrimp and ‘beef debris’ po’boy sandwiches and Cajun spiced gumbos to the sounds of live New Orleans-style brass band, the Lowdown Street Orchestra and Jules Boult. The tunes are free from 5pm, when the brass band will lead a ‘second line’ – a procession of people dancing their way through the streets – before settling in to pump out some sweet jazz funk to accompany the grub.

Gumbo Kitchen founder, Michael Cotter says the inspiration behind the event was drawn from his time spent in New Orleans during the festive season, where ‘second lines’ are in the streets every week. He’s hoping people will come along and get involved. “There are just festivals all the time [in New Orleans] and people dancing through the streets to great music, and I thought it was something that Melbourne people would love,” he says.

Cotter says they’re hoping to make the party a biannual occurrence, with one event for Fat Tuesday and another for the Hurricane Katrina anniversary, where profits will be sent over to contribute to the continued rebuilding process in New Orleans.

Fat Tuesday is on at Hardy's Reserve, Macpherson Street, Princes Hill at the north gate of the Melbourne General Cemetery from 5pm to 10pm on Tuesday February 21.
