It has been two years in the making, but the gents who brought us Three Bags Full (since sold) and Two Birds One Stone are spreading their wings to Richmond with their latest venture Top Paddock. Everything that owners Nathan Toleman, Ben Clark, Diamond Rozakeas and newcomer Sam Slattery touch seems to turn to gold and we can see this one following suit.

Toleman promises that some of our favourite dishes from the other cafes will appear on the menu, and head chef Jesse McTavish will be bringing his own personal touch. “Jesse has a great outlook on food,” says Toleman. “He is all about direct sourcing and he wants to be able to go to the egg farm and see exactly where our eggs are coming from.”

Top Paddock will be using Five Senses coffee, as well as using green beans and an in-house roaster to create signature blends to match the food.

When it comes to the fit-out, Toleman and the crew were extremely hands-on, sourcing a beautiful location with plenty of natural light and greenery. Like many venues these days, they’ve tried to minimise their carbon footprint by using as much recycled materials as possible.

Something that’s particularly important to Toleman and the team is that his customers are able to feel at home. “We want it to be a lot of things for a lot of people,” he says. “We want people to be able to come every day; we want to get to know the locals.”

The boys are looking forward to settling in for a while and focusing on building the business before moving on to any new ventures.

“At the moment we are really happy with our work-life balance and don’t have any plans to open something else for the next while,” Toleman laughs.
