Recently, the quiet shopping strip of Wattletree Road in East Malvern has become quite the hotspot, and it’s all centred on one place – Fergus cafe. Since opening its doors a couple of weeks ago, Fergus has become a hit with the locals as well as those seeking quality coffee and something a bit different for breakfast and lunch.

The location of the cafe, nestled within a relatively deserted shopping strip, may have most people stumped, but with locals walking up from their nearby homes and lining out the front on weekends, in actual fact, it is brilliant. Removed from the bustle of the shops, it offers a secluded escape for those who can’t be fussed going to Glenferrie or Burke Road for their morning coffees.

The duo behind the cafe, Pat Horan and his fiancée Elisa Goethals, ventured into the project driven by their passion for tasty fresh food and perfectly brewed coffee. Having previously worked as a barista in some of Melbourne’s best cafes as well as owning his own business, Mobile Coffees, Hroan wants to share his secrets to a truly great cup of Joe. Being responsible for the constant hissing and tapping of the three-group customised Synesso espresso machine, Horan is at home at the head of his cafe. “I’m behind the coffee machine everyday, that’s where my passion is and that’s where I belong,” he says.

As a food enthusiast and Masterchef 2011 competitor, Goethals helps to write the seasonal menu, which includes one-of-a-kind dishes like sweet pumpkin pancakes with spiced coffee crema, toasted pepitas and lashings of maple syrup.

The fit out of the space is the main attraction. After a long renovation and design process, everything finally came together to produce a clean modern boutique cafe with a funky edge. Elements like oil drum lampshades, whitewashed exposed brick walls and colourful artwork invite customers to sit back, relax and take in the atmosphere.

One of the most intriguing features in the room is a cold drip coffee maker set up on the main table, the perfect way to enjoy coffee on a balmy summer day. “It is great served over ice and you can really define the different flavours in the coffee with the cold brew,” explains Horan.

When asked what role Fergus can play in the local landscape, Horan has no hesitation. “A place to come and experience and open up your palette to try something a bit different.”
