If you’ve ever been to the original Everyday Coffee in Collingwood you’ll have seen the odd pair of friends engaged in conversation. But mostly, heads are buried into Macbook Airs, and people nurse big mugs of black filter coffee over a couple of hours.

The new Everyday Midtown, inside a former retail space on Little Collins, doesn’t have any tables. It’s primarily a takeaway venue, with few seats and a couple of comfy nooks for a spare five minutes. “[We’ll] do a lot of takeaways really, really fast,” says co-owner Mark Free. “It’s set up to pump out the volume.”

With the help of up-and-coming architects Andrej Vodstrčil and Naomi Brennan, the Everyday team replaced the existing strip-lighting and installed ambient pendants; built a polished-concrete bar; and trimmed the room with birch-plywood benches and shelving. Double-frontage floor-to-ceiling windows flood the space with natural light. “We’ve smoothed out some of the rough edges of Collingwood, I think. We’ve kept the minimal aesthetic, but just classed it up a bit,” says Free. “You always do a bit of a better job the second time around.”

Like in Collingwood the menu includes pastries from Loafer, and choc-chip cookies and banana bread baked by Everyday. Sadly, there are no 5 & Dime bagels at the moment. The coffee’s all its own, roasted at Coffee Supreme and Bureau, with a mostly Colombian blend for milky cups, and some interesting single-origin coffees from Honduras, Ethiopia and Kenya for something a little different.

Midtown isn’t the last you’ll see of the Everyday expansion, either: “We’ve got a bakery we’re working on in Northcote,” says Free. “So watch this space.”
