2025 was supposed to be the year of the pickle. But 2026 is coming for the title, with ice-cream shop Billy van Creamy and Melbourne-based preserves company Acide teaming up on a sure-to-be divisive dill pickle sorbet. 

The punchy sorbet doesn’t shy away from the pickle flavour and even comes with half a pickle on the side. But it does hold back in one area. “We wanted to capture the acidity and tartness of the vinegar from the pickles, as well as the dill. The only thing we didn't want to capture was the garlic,” says head chef Milly Boland. So the Acide team made a batch of pickles without garlic for the collab. “We ended up with the final flavour that is very light and refreshing, like a palate cleanser.”

If that still sounds too gnarly for you, the duo also teamed up on a sweeter, fruity number that sees a gluten-free brown butter crumble and pickled plums from Goon Fruit in Nar Nar Goon that have been made into a jam swirled through a fior di latte ice-cream base. Both flavours are available for a limited time.
