Back in June 2016, The Lucas Group started work on an unnamed Japanese restaurant on Flinders Lane, just 150 metres from Chin Chin.
Since then the group has been calling it 175 Flinders Lane, but it doesn’t have to anymore. The name is Kisumé and it means “a pure obsession with beauty”.
In other news, Lucas has tapped Korean-born sushi maestro Moon Kyung Soo as a Co-Executive Chef alongside Shaun Presland. Moon, who leaves his Mikuni restaurant in Singapore to take on the role, is a sake sommelier and has a number of certifications including the preparation, cooking and serving of blowfish (which requires extensive training). Before Mikuni, he opened the Japanese restaurant at The Armani Hotel in Dubai, and also worked at Hotel Okura in Tokyo.
The Lucas Group also announced that Markus Tschuschnig will join Philip Rich in putting together the wine and sake menu. Tschuschnig was previously Food and Beverage Director at Masa, a famous omakase restaurant in New York.
Kisumé, which has been designed by Melbourne-based architecture firm Wood Marsh, will be spread over three levels, with a hot kitchen in the basement, a sushi restaurant on the ground floor and a bar, private rooms and an omakase space up top.
The restaurant will open in stages from late April/early May.
